Catalan stew

Servings Size: 6
2 chicken feet, skinned or 1 chicken neck
1 lamb foot
1 ham bone (about 2 pounds)
2 pounds beef or pork
5 quarts water
1 slice French bread,
1 large egg, beaten
1/2 pound ground pork
1/2 pound botifarra or chicken sausage,
2 garlic cloves, peeled and finely chopped
1/4 cup fresh parsley leaves, finely chopped
Salt and freshly ground black pepper, to taste
1 potato (about 1/2 pound), peeled and cut into cubes
1 carrot, cut up
Flour for dredging
Put the chicken feet or neck, lamb foot, ham bone or piece of ham, beef or pork bones in a large stew pot. Cover with the water and boil for 2 hours, turning the meat occasionally. Fill in with water if necessary. Meanwhile, make the large meatball. Soak the slice of bread in water. Take the water out and put a mixing bowl with the beaten egg. Add the ground pork, botifarra or chicken sausage, garlic, and parsley and season with salt and pepper. If the meatball doesn’t hold together well add some bread crumbs. Form the meat into a single large ball and keep it in the refrigerator. Boil the meat bones for 2 hours, turn the heat off and remove the bones. Transfer the meat to a stew pot or large casserole. Strain the broth and add it to the stew pot.
Bring to a boil and add the potato, carrot. Season to taste with salt and boil for 10 minutes. Dredge the meatball in flour, add it to the broth and boil until firm, about 20 to 25 minutes, filling in with water if necessary. Serve immediately.

Dear Emma,
Thank you for your letter. It was good to hear from you. I’m glad you had a good holiday. We went to Scotland in August and had a lovely time. First we went to the Edinbourgh Festival and saw some very interesting shows. Then we went camping in the Highlands. It was fantastic but the weather wasn’t very good. We went for some long walks and we went swimming in the lakes but the water was freezing.
At the moment I’m doing a lot of work for school. It’s really difficult at the end of the holidays but I’ve got a lot to do before school starts next week. We’ve got a new Maths teacher this year. He’s very strict and gives a lot of homework. I don’t think I’ll do very well in Maths this year!
I’m really looking forward to seeing you again. Why don’t you come to Southhampton for a weekend? I’m having a party on September 5th and it would be lovely to see you. I bought some Madonna records during the holidays and I’m sure youwill like them. Try and come. Ring me and let me know.

Last fall I went on vacation. We arrived to New Cork at twenty after seven o’clock pm. It was cold and we took the subway because we wanted to go to the theater, which was in the city center. We walked along the sidewalk for a few minutes and visited several stores because we needed a pair of pants. My kids went into a toy store and bought a toy truck, which had a blond truck driver. I didn’t like the color. Then we paid for the check. We also bought some candy and some cookies. We took a cab back to the hotel, the cab driver was an Englishman. We got up late the following morning. We hired a car and stopped at a gas station. The gasman was very kind. We traveled for about 25 minutes and stopped at a bookstore. We threw some paper to the garbage can, because lots of trash collectors were working at this time. One of them said to us that he had been on gaol for two years, and his son was now at grade 6 at school and liked billfolds with pure leather, where he put his allowance. We arrived to the hotel, turned on the taps and went into the tub.

A trip to London

Last week I drove to London by car. As there was an accident on the M25 I had to take a detour. I stopped in front of a theater to ask for directions. A young man told me to turn right at the intersection and ask again at the gas station. There a friendly sales clerk told me to take the second exit of the traffic circle. After I had passed a pedestrian crossing I saw a bookstore and a large parking lot. I parked my car there and walked to the center of London.

A busy day

Mrs Fisher was very busy today. She drove to a butchers’ shop for some ham. Then she went to the supermarket to get some powdered sugar and mashed potatoes She needed diapers for her baby and some clothespins. Then her daughter Sally saw the candy store and Mrs Fisher bought her some cotton candy . At home she put everything into the closet. Then she opened the faucet, filled water into a pot and put it on the stove

We went by car and didn’t take the airplane.

British and American English Differences
The difference between American English and British English is bigger than “You say Tomayto, I say Tomahto.” The difference can be found in vocabulary, slang, sentence structure, syllabic emphasis, and even punctuation. As a speaker of American English (I have found a few contrasts between the speech of the chaps and the speech of the blokes.

My sister and I went to Scotland and realized we had lost our traveling things. The lady at the info desk said there were two ladies in grey jumpers who were asking about us. There we found our two “grey-jumpered” grandmothers!
It wasn’t until my second week in Edinburg that I could finally get the courage to ask for the “toilet” (blushing) but it was the only way they would direct me to the restroom. Occasionally they would point me to the first floor. I would make my way down to the ground floor.
British biscuits are the American equivalent of sweet and cream-filled cookies. Children in England are highly educated. Rather than just taking a math class, they take maths class. Other phrases include queueing instead of standing in line and looking for the Way Out instead of the Exit.

Bacalla a la Llauna – Codfish in the tray

Serving Size: 6
2 lb codfish, desalted
1 oz of pimento
1 glass of white wine
4 garlic cloves
Parsley, finely minced
1 cup olive oil
Flour
Salt
Preferably use the high part of the codfish, without thorns. Once desalted, cut the codfish and dry the pieces. Then, flour the fish and fry it in hot oil. Put the fried pieces in a high tray (llauna) suitable for the oven. In the same oil fry the slices of 2 garlic cloves and, when they begin to gild, add pimento and after the wine to avoid pimento to burn. Leave boil one minute. Put this mixture over the fried codfish already in the tray. Prick slight the rest of garlic and mince the parsley. Dust the codfish with this mixture and put the tray in the oven (grill function) for 30 minutes.
Catalan Sauté of Calamari in Onion Marmalade
Servings Size: 4
1 1/4 lb calamari, cleaned
3 tablespoons virgin olive oil
1 dry red chilli pepper, broken
3 large onions
Salt & pepper, to taste

Clean calamari and cut into 1/2″ rings. Dry calamari on paper towels and reserve. In a frying pan, heat 1 Tbs. oil over medium-high heat. Add the calamari and saute until the rings turn opaque white, about 30 seconds to one minute. Transfer calamari to a bowl and reserve. Add oil and heat. Add chilli pepper and heat until it turns dark. Remove chilli with a spoon. Add the onions to the hot chilli oil and cook, stirring, about 5 minutes. Reduce heat to medium, partially cover pan and cook, stirring occasionally, until onions are caramelised (golden brown), 30-40 minutes (add more oil if onions are dry or stick to the pan). Season with salt/pepper. Add calamari and stir until heated. Serve with slices of hot or toasted French bread.

Dear Maria,
I thought you’d never reply to my last letter! Anyway, back to your question. Well, if I were you, I’d choose the museum job. Working in a restaurant would be very tiring. Trust me I’ve done this job, and I left in a
month! It’s true that you talk to lots of people, listen to their discussions, which can sometimes be very interesting, but still you get really tired.
Working in a museum though can be really interesting. You just have to explain to the visitors what is what. You may think that you will have to talk all day, but that’s not true.
I suggest you take the museum job. It’s easier and less tiring. I’m looking forward to get
your reply.
