1- In order to pick the cocoa, it’s necessary to have special tools.
2- Then we start to cut the ingredient so slowly as you can.
3- You have to hit the cocoa in the centre. However, it’s difficult to break it because it’s extremely hard. Each person breaks 12.000 cocoa beans.
4- Then, we put the cocoa in a process of fermentation for 6 days. After this, we will have to water them every 48 hours. Before putting them, you have to shake fast to reduce as much water as posible.
5- Then, we will put them into “sacks” and we will weigh them.
And finally, we will have the cocoa reafy to sell it!
